Squash soup!

Here’s a squash soup I made for New Year’s Eve. It came out GREAT!

Peel half a butternut squash, trash the seeds, and cut into pieces 1/2″ thick.
Peel a tart apple (eg, Granny Smith), cut into slices and trash the seeds.
Peel a few carrots and cut into 1″ pieces.
Coarsely chop a sweet onion and saute in liberal amount of olive oil. Add the squash and carrots and saute a few more minutes.
Add a can of vegetable broth and equal amount of water and a generous tsp of brown sugar or maple syrup or honey and the apple pieces, bring to a simmer, and cook until the squash is easily cut with a fork, about 30-40 minutes.
Scoop the solids into a food processor or blender and puree. Return the puree to the soup. (It takes several batches to get all the pieces pureed.)
Add 1/2 tsp salt or to taste, some ground black pepper, some powdered cayenne. Add a tsp of very finely chopped fresh ginger root. Taste and re-spice. Could add some cream or half-and-half, or some butter, but it’s good without it.
Serve with garnish bowls of sour cream, chopped cilantro, and chopped scallions.
